ÇaFleureBon Behind the Bottle with Carine Baudry: Nose of Le Palais des Thés + Sample Set Draw

Heading in to last January’s Elements Showcase I was expecting to find fragrance in all the old familiar places; perfumes, candles, room fragrances, incense, and body products. The exhibit hall was full of all of those things but I found a product which allowed me to encounter fragrance in an unexpected way. When I stepped up to the Le Palais des Thés booth Diana Castelnuovo-Tedesco introduced me to this line of tea which has a fragrance added to it to enhance the experience. If you’re thinking “So what its just jumped up Earl Grey.” Think again these teas have a wonderful fragrant component. Since my return home I’ve had the opportunity to try all of the teas in the line and they have been a lovely addition to my tea drinking habit. My favorite became Thé des Amants which is a black tea with fragrant notes of vanilla, apple, almond, cinnamon, and ginger. When I was trying another blend Thé des Moines, at the Elements Showcase, which was based on a recipe from Tibetan monks I remarked to Ms. Castelnuovo-Tedesco how deep the scent was. That was when she told me about the nose of Le Palais des Thés, Carine Baudry.

 

Mme Baudry is a graduate of the Isipca school where many of the best noses in France have learned their art. In the early 2000’s she met Francois-Xavier Delmas and Mathias Minet and together they established L’Ecole du Thé . She is currently the Director there, as well as being involved in directing the fragrance blending at Le Palais des Thés . I was fascinated with her process and so instead of taking you Behind the Bottle I’m going to take you Behind the Tea Bag with a few questions for Mme Baudry.

 

 

Mark Behnke: How did you become the head "nose" for Le Palais des Thés?

Carine Baudry: Various encounters led me to the world of tea and to Le Palais des Thés −− most notably, meeting [Le Palais des Thés’ founder] François-Xavier Delmas and [Le Palais des Thés’ co-director and co-founder of The Tea School] Mathias Minet. After working ten years in fragrance creation, I then chose to focus on the olfactory richness of a single product, tea −− and what a product it is!

 

MB: How do you match fragrance with tea? Do you work with a traditional top note, heart, and base note construction or is this meant to be a less variable fragrance experience?

CB: Describing and evaluating the quality of a tea, especially a Grand Cru, follows exactly the same process as perfume: top note, heart, base note. The idea is to have all three of them in perfect balance and harmony.

  

MB: You are heading out for the tea harvest in the next few days, is that correct?

CB: I am just back from Darjeeling where the first flush harvest is taking place. It is an exceptional time for smells and fragrances. We are surrounded by incredibly rich, intense, and yet very refined fragrances. These fragrances continue to evolve as the tea is processed, in a chemical transformation that is natural, yet perfectly controlled by man (e.g. the manager of the tea plantation).

  

MB: Do you choose any of the teas based on their fragrance or their ability to combine with something you have in mind?

CB: When it comes to selecting the teas, the intensity and personality of the fragrances are crucial.

MB: Do you have a favorite tea-based perfume?

CB: “La XIIIe Heure” (The Thirteenth Hour) from Cartier, created by my very good friend Mathilde Laurent.

  • I’m a tea fanatic, so this sounds wonderful to me. I took a look at the website and was intrigued by the Japanese selections (I drink a lot of sencha + matcha), so I’d love to try Fleur de Geisha or the house’s genmaicha, which is made with bancha, also a favorite of mine.

    As for unusual places for fragrance: whenever I walk by the neighborhood laundromat, I have to say that I love the smell of the air pumped out of the place, especially during wintertime. (-;

  • For finding scent- most unlikely to me was the first time I took my Mountain Dog to the snow. Just frozen water crusted on her fur but still my favorite part of sub zero winters.

    I came to love tea long before I ever bought a bottle of perfume. It would be lovely to try any of the Palais Des Thes offerings.

  • As a child, we used to love to smell the cat after she’d been out sleeping in the pile of firewood outside. Her fur smelled just delicious! Poor thing probably didn’t enjoy us all huffing her though. I would love to try any of the Palais Des Thes teas! Thanks for the draw.

  • Well in addition to my perfume love affair, I am also an addict of fragrant teas. It’s hard to narrow down, but I would love to try their Christmas tea, No. 25 Noir. Sounds so fragrant and amazing! Thanks for sharing this fabulous find of a tea house with us and the draw! 🙂

  • Lovely review , I like tea but I actually am a coffee addict. I also enjoy drinking herb teas that I mix to have different aromas each time. I am very intrigued by the scents of their teas and would love to try them. Since I am a great fan of Cherry blossom I would love to have a sip of their Fleur de Geisha green tea.

  • Loving my tea, I found quite a few sounded very enticing. Tho’ ultimately I think our tastes in tea are probably perfectly aligned, as none sounded better than your own favourite “Lover’s Tea” = THE DES AMANTS. … (Tho’ “Fleur de Geisha” sounds really lovely too !)

    Unusual place to find fragrance: the streets of NYC after a good rainstorm with the unusual smell of cleaned asphalt-always loved that as a kid.
    I adore tea and cherry blossom fragrance so I would love Fleur de Geisha.

  • So many beautiful black teas, both ‘perfumed’ and just the pure ones, which I love as much. I know it’s a Christmas tea, but the No 25 Noir sounds great, and the Yunnan D’or too.
    Today I was cycling through town, and a coffee shop was roasting coffee. The scent was very strong and clear to smell several streets away, both the burnt smell and the coffee aroma melting together and taking everything in its path. Gorgeous! Thank you for this great draw.

  • Wow, I love when perfume ventures into food (or, well, beverages as in this case). I’m mostly intrigued to try the “Fleur de Geisha”, flavoured with cherry blossoms.

  • I find the fragrance outside an artisanal bakery -very early on a winter morning-irresistible. Difficult to pick only one of this extraordinary tea selection but I think I could become partial to The du Hammam.

  • I’m old fashioned and like to stick my nose into flowers even if I don’t know what kind it is or if it smells at all. Not always pleasant, but often a surprise.

    The one that most appeals to me is The Du Hamman, a rich blend of tea, rose, and berries.

  • Mmm du hammam looks fascinatingly delicious! I love roses in my tea 🙂

    I love finding fragrance in cooking. Combining spices and ingredients until it ‘smells right’ is how I make all my dishes. Just this last week I did fragrant fondue, and combine lil cheese cakes with rose chambord and dark chocolate. Though many of times it is less obviously fragrant, and deals more with which spices to use on chicken.

  • Most of the places I find fragrance are rather expected…after rain, gardens, woods, outside in general, baby heads, kitty tummies, campfires, fresh laundry,etc….I used to have favorite dolls which, like my blankie, also had good (to toddler-me) smells.

    I think my fave tea might be…milky wu long, or the des sources, jasmine pearls…wow this site is addictive!

  • I love bergamot in tea so Blue of London sounds lovely to me. They have wonderful selection of black and green teas. Very nice of them to participate in a draw.

  • My fave unusual place to find fragrance is in my local thrift shop! some great deals. I love ALL the tea.

  • I’ve always love smelling different kinds of ea; when I was young, I loved to sit and sniff all the herbal teas and all the spices we had. Currently, i just live smelling things outdoors. Right now there are some vines blooming in our backyard that I can smell from a good 30 feet away!

    For teas there, i’d probably go for the Vanille. I just ran out of vanilla tea at work.

  • My favorite unusual place to enjoy scents is the fur or hair of animlal. I like to smell cat fur – it smells sunny and clean, almost like clean laundry. My dogs’ fur always smells like whereever they’ve been – like decaying leaves or pine needles.

    I really love tea and the Sam Bodhi looked interesting.

  • Of the teas on their website, Tamaryokucha Imperial might be my favorite as I like Japanese tea but had not heard of this variety. Thanks!
