“Gourmands” are not my favorites in perfumery; I admit that I don’t often put my nose on them, as I feel this genre is far from my olfactory ideal. However, I experimented with several sweet perfumes in my young years: Mugler Angel, as soon as it was released in 1992… but very quickly abandoned because all the Parisiennes wore it in the metro and, much worse, some colleagues. I was longer loyal to Lolita Lempicka Lolita Lempicka, also worn from its launch. But I quickly realized that this type of perfume did not suit me. Even today, I experiment with sweet fragrances with trepidation…ready to flee!

 When I discovered the first visuals announcing the arrival of Akro Bake, my reaction was nonplussed: another gourmand, more sugar! I admit that I was a little disappointed, as I did not expect it from the daring brand created by Anaïs and Master Perfumer Olivier Cresp. With, among my favorites, Akro Awake (an ode to coffee treated in its many facets: full-bodied, milky, spicy) and Akro Night (an ultra-sexual rose, boosted with cumin and saffron). Of course, I read the storytelling behind this new creation, where daughter and father reveal that the inspiration came to them from the delicious lemon cupcakes bought at Crumbs & Dollies, a pastry shop located in Carnaby Street (more exactly in Kingly Court, a one-story courtyard filled with small restaurants and shops).

So much for the place; as for lemon cupcakes, trendy food in France quickly pass and our traditional lemon meringue tarts remain the reference here, often reinterpreted by our pastry chefs (the best in the world, of course!). It is a pastry that I adore and generally, I don’t like to smell what I like to eat. So, we are back to my aversion to gourmand fragrances and to an observation: should I really try this new Akro? The addiction (which is the signature of Akro, whose name is the rewriting of “accro”, which means “addicted” in French) was tempting on paper, but what would it be on skin? Only one way to find out: head to Jovoy Paris!

I first sprayed Akro Bake on a blotter. The promise of gourmand lemon is there, overflowing, generous, almost suffocating. Lemon is indeed omnipresent, both fresh and sharp, incisive and tangy. It overflows as if Olivier Cresp had voluntarily lost control of his dropper and yet, this overflow bewitches my nose, so much that I can’t detach myself from this talkative scent strip. The initial acidity quickly becomes rounder, creamier. I am immersed in the heart of the famous cupcake, in a vanilla cream flavored with lemon juice and peel. Then another texture becomes noticeable: that of the meringue placed on a bed of whipped cream. I feel like a breath of sweet, airy air. Then brittle, as if crystallized. The notes of lemon and meringue blend naturally, the acidity of one rounded off by the sweetness of the other; I find on the nose what my taste buds feel when I bite into a lemon pie: it is impressively real. The lemony facet stays on the blotter for long hours, tenacious and always rich in gourmet notes. But during the drydown, a new texture makes its way: crunchy, sweet and a bit amber. Olivier Cresp has recreated almost identically the texture of the shortbread dough, the one that melts under the tongue, “wet” by the butter and crumbles into a thousand pieces barely crunched. In Akro Bake, the dough smells chewy, crumbly, soaked little by little with the lemon cream.

And on skin? The olfactory textures are always present, especially the lemon cream which moves in a tangy and heady vanilla contrast. On my wrist, the evocation of meringue is undeniable, accentuating the gourmet spirit of Akro Bake. And the short crust pastry effect gradually takes shape: amber, warm and reminiscent of the bakery scullery smell at dawn. Mesmerizing.

Akro Bake is an evocative perfume, perfectly playing the score of authenticity. Bake is a faithful reproduction of everything you can feel when tasting a lemon cupcake (or pie). The realism of the textures is stunning and, for that alone, you must try it, even by those for whom  don’t like gourmand perfumes. Although it’s not my preferred genre, but it managed the feat of holding my attention to the point of becoming obsessive and writing a review: its execution is a gem from a technical point of view, and you can clearly feel the mastery of a perfumer at the top of his game. For me, Bake  is one of the fragrances that best sums up what a “gourmand” is today. A worthy heir of Mugler Angel.

  • Definitely interested in smelling this, especially how the lemon sounds balanced with other aspects. Too often, I find that lemon scents carry too strong a floor cleaner vibe. It sounds like this may go in a different direction. In the USA

  • Lemon desserts are my absolute favorite and the contrast between tangy and sweet sounds like it would make a complex and delicious perfume as well! I’ve tried a couple from Akro already and enjoyed them, in particular Awake and Ink, and I’d love the opportunity to try Bake as well! I’m in MN, USA.

  • Akro is one of the fragrance houses I have yet to try. I have nothing but great things about it. Olivier Cresp is one of my favorite perfumers and to know he is behind this gourmand masterpiece I am excited for a chance to smell this. I am a gourmand lover and lemon cake is one of my favorite desserts in real life so this is something that I would love to have in my collection. Sounds similar to Lira and I love that fragrance. With notes like lemon peel, rum, Chantilly cream, praline, brown sugar, vanilla….yeah I will need that lol.

  • I have been salivating through and through while reading Emmanuelle’s article. I cannot believe a perfume could so truthfully reproduce the scent and layers of a lemon cupcake. The zestiness, the cream, the sweetness. It must be truly an impressive fragrance to smell.
    I have heard and read much about Akro, but unfortunately never got to test anything by the house.

  • I don’t know how meringue tastes like. But I like lemon cream (years ago I was wow’ed by Chanel Allure Edition Blanche) and as you say, even though you had low expectations of it being a gourmand, it’s not just another gourmand, but one done very well. I am curious to try it, I’m pretty sure it’s great.

    I love this fragrance it’s a gourmand but a nee kind of doing gourmand perfect for summer, edible you can feel the lemon peel at the beginning and then it becames powdery vanilla without being fake but yet remaining a perfume smelling. Great!

  • Like Emmanuelle, gourmand fragrances are really not my cup of tea, though I love tarts, cakes and all sorts of sweets. Especially lemon pies (I baked one just a couple of days ago!). By this perfume I’m particularly intrigued by the combination of the sweetness of meringue and fresh and zesty lemons. Love it!

    Nice review, I would love to try it. In general I don’t like gourmand perfumes, however I have a weakness for cakes that have lemon as an ingredient, such as lemon curd and lemon tart. I have only tried Ink from Akro, which left a very good impression on me. By the way I’m from Toulouse, France.

  • Not surprisingly, the notes list of Akro Bake sounds like an ingredient list for a delicate French pastry. Lemon and cream combinations are probably my favorite dessert. The touch of rum and vanilla add some sophistication. Gourmands are not generally my favorite perfume genre either but this sounds like it would trigger some very happy memories. I’m in the US

    High quality gourmands are a must for every fragrance lover in my opinion.
    I can’t say it’s even my favorite genre, but I do love well made gourmands. Unlike Emmanuelle Varron I don’t prejudge gourmands in a negative way, but my personal issue with some , is if the aroma is synthetic , and let’s be fair a lot of gourmands do smell artificial, and even like sweetened plastic.
    I like lemon cupcakes, the natural and close to the real desert aroma of Bake , its chewy feel , and the fact it’s made by Olivier Cresp. After all co-owning a company is a guarantee you’ll put your best on the market . I do own Awake , refined coffee fragrance i always wear with a suit.

  • I’ve been looking at Smoke for a while but I haven’t tried any from the house yet. Lemon desserts are my favorite, my graduation cake was lemon filled, so I could absolutely love this. The “ Mesmerizing” description solidifies that for me.

    I am a huge fan of Akro since I tried Awake, which totally blew my mind and gave me another perspective of what coffee based fragrances can be.
    Bake seems like a great fragrance, I think that what got my attention the most is the fact that lemon is always present, the vanilla cupcake notes look totally amazing. I would love to put my nose on it soon.

To be honesti cant relate with the reviewer since i enjoy most of gourmand fragrances although i found myself not wearing so often.     I have not tried an Akro Perfume, but I have heard so many good things about them. The review was amazing, hearing that this resembles a lemon cupcake is amazing, the notes sound amazing, and the review made this sound like it indeed does get as close as possible to a lemon cupcake that it can get. All this love for this fragrance that I get from this article, and my love for lemon flavored desserts, makes it really stand out.

    Why do you even review a gourmand , if you openly admit you do detest the whole genre ?!?

    I bought 65-70 fragrances because of reading different people takes on Cafleurebon, over 60 of which are gourmands…not six , or sixteen… SIXTY . Bake is the only one I’ll try because of my love for gourmands, the genius of Olivier Cresp’s work and his inspiration for Crumbs & Dollies lemon cupcakes, and not because of what i read.
    Dark and Awake I own by the way.

    Akro is an interesting brand. I tried all of their fragrances except this one. I’m happy someone finally mentioned Night because I was sooo blown away by it. I’m not sure I would dare to we are it in public but I absolutely love it…My other favorites are Dark and Ink. I share Emmanuelle’s thoughts on gourmands, although I do have some sweet perfumes I love and often use. When it comes to eating sweets, lemon tarts, cupcakes and other sweets have a special place in my heart. Reading here how realistic they managed to make this fragrance makes me want to smell it even more. I am particularly intrigued by the crumbly buttery pastry in the dry down. I’m from Illinois US.

    I own a discovery set of Akro fragrances. So far, I’ve tried two of them and I like “Awake”, and I like “Smoke” at least somewhat. I like some other ones too which were made by perfumer Olivier Cresp. I’d like to try Akro “Bake”. I don’t think I have anything like it in my collection. I appreciate it that Emmanuelle said, in other words, that she’s not going to automatically like this gourmand, and it sounds like she was pleasantly surprised by “Bake”. I like lemon cupcakes and lemon pies, and I am intrigued to try “Bake” because of how realistic it’s resemblance to lemon cupcakes and lemon pies seems to be. I live in the U.S.A.

    Can’t believe what I just read, I’ll try to ignore Emmanuelle Varron hate towards gourmands , and focus on Akro Bake part.
    I’m on a diet right now, and the lemon tarts with vanilla and merengue instantly puts Bake in a drool worthy category. Maybe the low carb diet amplifies the feeling , but I find the idea of small bakery inspired , lemon dessert like fragrance so mesmerizing , I’m literally drooling at the moment.
    Akro Bake is a gourmand with character, so YES please.
    I wonder what Olivier Cresp did with Akro , I mean without having corporate guys telling him what to do .
    All I know about the house is their fragrances are inspired by addictions, and Bake is my next gourmand addiction

  • Exactly like Emmanuelle, “Gourmands” are not my favorites in perfumery; I admit that I don’t often put my nose on them.” For all I know, they might smell fine on me, and there are surely many gourmands out there I would enjoy if I gave them a chance. Akro Bake caught my attention with its focus on lemon bakery; I love ultra-tart lemon desserts and I can imagine the sharp acid tang of lemon balancing out a sweet fragrance. The way Olivier Cresp captured the textures of meringue and shortbread is also impressive. I’d like to try it just to study the technical execution. Great review, Emmanuelle.

Akro seem to be one of the houses that could take inspiration from anywhere and make the creation an alluring masterpiece, in one way or another. The ‘addictive’ meaning of the French spelling of the name has somehow made things make even more sense… I am an absolute sucker for lemons served in any possible way – lemon pie/ cupcake, lemon custard, lemon meringue, lemon icing… I love eating lemons on their own… It is almost a magical fruit to me, along with its ability to change the taste profile of drinks, freshen up salads, speed up recovery from cold, and smoothen dry, rough skin. The stages of the development of Bake sound just heavenly, I crave experiencing every single one of them. And Emmanuelle’s line “I find on the nose what my taste buds feel when I bite into a lemon pie” seal the deal for me – I need to have this as it is a LOVE already! The amber – like base with vanilla and brown sugar sounds divine. To call it a worthy heir of Mugler Angel is a promise of proper goodness, and I need it in my life sooner or later. Haven’t had a chance to try any of Akro’s other creations – will make up at the first possibility. Massive thanks from the EU

    As straightforward person part me wants to say “Applauses to you Emmanuelle Varron for the honesty” , and the other part of me is like “You should’ve followed your own words, and fled away” .
    Being direct , and honest is a rare sight nowadays, absolutely love it , yet Emmanuelle doesn’t seem comfortable at all doing the whole review , like a great Canne Film Festival award winning drama actress, who’s playing the role of a villain in the Marvel Universe .

    Olivier Cresp did composed quite a few gourmands, including the trendiest one for the past few months called Yum Pistachio Gelato 33 by Kayali Fragrances , collab with his son Sebastien. Also speaking of Akro alone, at least on my skin Dark is way sweeter compared to Bake. Even in Smoke ,even though not a gourmand, there’s a nice amount of sweetness too.

    I tend to disagree, you actually DO , you just don’t like gourmands , veggies are fine 🙂 For good or bad my memory is really strong, and I well remember your affinity for the uber vegetal Le Potager line by L’Artisan Parfumeur. You were heads over heals about the whole line in your overview, especially for the fennel heavy Cedrat Ceruse, where you said you love the smell and taste of fennel in the kitchen, and in the fragrance. Also for the squashed pea like Iris de Gris . The fragrance was also part of your Top 10 of 2022 , where you again praised the usage of green pee , the vegetables and the spirit of the garden.
    I know all Akro fragrances , and if I have to rate my favorite ones:
    1. Awake
    2. Bake
    3. Dark / Smoke
    Bake is a happy fragrance , lemony , zesty, a bit boozy , realistic and definitely not gooey sweet , mesmerizing indeed.

    I loved Emmanuelle’s review of Akro Bake. I love master perfumer Olivier Cresp and the uniquely diverse line he has created. My favorites from the line are Dark and Awake. Based on my other two favorites from the line you can tell I love gourmands, so when I heard Emmanuelle reviewing the beautiful gourmand qualities of Akro Bake it really caught my attention. I am from the USA.

    Greetings everyone
    We all have different expectations and opinions about basically everything Ms Varron has hers , I have mine. I went to Jovoy myself to smell Bake myself and it’s so spectacular , with well adjusted facets. What I was expecting to find in the essay, is at least a few sentences about the powerful rum note I smell in Bake , I guess Ms Varron thinks otherwise. Parisian patisserie and lemon tarts are my favorite, Bake is more the just a gorgeous lemon tart , it’s lemon tart soaked in rum . True gem of a fragrance made by the Master Perfumer Olivier Cresp.

    The Emmanuelle Varron review of Akro Bake left me puzzled. I’m talking about the doom and gloom , and the execration regarding gourmands. As far as I’m concerned it crossed the line .
    Big fan of Olivier Cresp, genuinely love gourmands especially when there’s anything boozy, even in smaller doses , Bake is a winner in my book. Next time in London I’ll visit Crumbs and Dollies too.

  • Like Emmanuelle, I was also surprised when I saw that Akro was releasing a gourmand. However, I do love the taste and smell of lemon cupcakes so I was definitely intrigued. I am glad to know that the lemon doesn’t stay too tart or acidic. Emmanuelle’s comments about it being “reminiscent of the bakery scullery smell at dawn” really make me want to test it. I really enjoy Akro’s fragrances, so I am sure I will enjoy Bake. My favorite from them is Haze. I would love to own a bottle of Bake.   • That sounds wonderful, I would love to try this. Especially interested as Emanuelle describes this as “I feel like a breath of sweet, airy air. Then brittle, as if crystallized. The notes of lemon and meringue blend naturally, the acidity of one rounded off by the sweetness of the other; I find on the nose what my taste buds feel when I bite into a lemon pie: it is impressively real.”

    I had an Akro sampler set. Such an amazing house and scents. I really loved Awake. Thanks to Emmanuelle’s delectable description of this newest scent, I believe it would be a perfect pairing with Awake’s perfect coffee scent. I’m in Florida USA.
